Lunch menus are being overhauled to promote healthy lifestyles in the West St. Paul-Mendota Heights-Eagan district. A registered dietitian, hired for one year with a State Health Improvement Plan grant, is guiding the changes. At the five elementary schools, for instance, a whole grain is offered daily, beans or legumes are served once a week, and potato chips are gone from the menu.
